As the Texas beef market experiences unprecedented inflation, as a family-owned restaurant, Bigham’s Smokehouse is announcing a modest, temporary surcharge on all brisket items, effective July 15, 2025. This adjustment will ensure we can continue serving the high-quality, hand-trimmed brisket our guests have come to love, while remaining financially sustainable in today’s challenging market.
Over the past quarter, the wholesale cost of beef brisket has climbed sharply. From April to July, our bulk purchase price of brisket has increased a staggering 31%. Without an adjustment, our margins would erode to unsustainable levels, threatening the very traditions and high standards we’ve upheld since 1978.
Our commitment is to bring you the best Texas-style barbecue, and that means using only top-grade 1855 brisket. We hate passing extra costs onto our guests, but these market conditions leave us little choice. This surcharge will let us maintain our quality, our team’s jobs, and the warm, welcoming environment you expect from us.
Key Details of the Brisket Surcharge:
Amount: A $2.00 per 1⁄4 pound surcharge on all brisket servings
Effective Date: Tuesday, July 15, 2025.
Scope: Applies to all dine-in, pickup, and delivery orders of sliced or chopped brisket.
Duration: The surcharge will remain in place until market prices stabilize; we will reassess monthly and keep guests informed.
